Invisible Apple Cake Recipe

Invisible Apple Cake Recipe

Hey, I’m Anne Carter welcoming you all to Beyond The Bayou Blog and I’m thrilled to share with you the magic of “Invisble apple cake recipe“. The Invisible Apple Cake is a delightful dessert that features thinly sliced apples nestled within a light, fluffy batter, giving the impression that the apples disappear into the cake during baking.

Last Saturday, my nephew Austin came over and mentioned this Invisible Apple Cake recipe. I got excited but realized I didn’t have the ingredients. So, I ordered them online, and they came super fast, in less than 30 minutes. We made the cake together, with Austin helping me.

When it was done baking, it smelled amazing! The cake turned out so good, moist with those apple slices all mixed in.  I served this recipe with one of his favorite Oatmeal Coconut Cookies. The moment I served him with the ice cream he requested me to drizzle the Praline Sauce over it.

So, just be ready to dedicate your next few minutes to our delicious cake recipe which will just blow your mind up. For a bonus tip, I will recommend you, use White Frosting which will definitely complement your cake.

Why I Love This Recipe?

  1. Delicious Flavors: This cake bursts with the delightful taste of apples! And not just a few – there’s loads of them in there! Plus, a hint of vanilla adds the perfect finishing touch to its flavor.
  2. Amazing Texture: Have you ever tried a clafoutis? Well, this cake’s texture might remind you of that – it’s like a fondant cake with slices of fruit, giving it a unique and enjoyable texture experience.
  3. Easy Peasy Preparation: Don’t worry about breaking a sweat in the kitchen with this recipe! It’s super-duper and easy to whip up. The only slightly time-consuming part is slicing up those apples, but trust me, it’s a breeze! Once that’s done, pop it all into a cake mold, and you’re set to have beautiful slices of goodness when it’s baked. Easy as pie! Or should I say, easy as apple cake!

Equipment

  • 8" x 8" square baking dish
  • Glass mixing bowls
  • Handheld mixer
  • Strainer
  • Cutting Board
  • Vegetable Peeler

Ingredients

  • 4 Apples sweet and crisp, small (or 3 large), about 1.5 lb
  • 2 eggs
  • 50 g sugar (about 1/4 cup)
  • 70 g all purpose flour (about 1/2 cup)
  • 12 g baking powder (2 tsp)
  • 1 pinch kosher salt
  • 100 ml 2% low fat milk (about 3.5 oz)
  • 20 g butter (about 1-1/2 tbsp)
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon for garnish

Instructions

  • Preheat your oven to 400°F.
  • In a large bowl, mix eggs and sugar until light and fluffy using a handheld mixer.
  • Add melted butter, milk, and vanilla to the mixture, and beat until well combined.
  • Sift flour, salt, and baking powder into the bowl, then beat again until smooth.
  • Quarter, core, and peel the apples, then slice them thinly (about 1 to 2 mm thick). Add slices to the bowl as you go.
  • Toss the sliced apples with the batter until they're all coated.
  • Butter and flour an 8" x 8" baking dish. Pour in the apple-batter mix, shaking lightly to remove air pockets and smoothing out the top.
  • Bake for 35 minutes. Let it cool in the dish before serving, and don't forget to sprinkle with cinnamon for that extra flavor!

Notes

  1. Pick the Right Apples: Look for apples that are crispy and juicy. Since we’re not adding much sugar to the recipe, it’s best to avoid tart apples like Granny Smith. Instead, go for sweeter varieties like Pink Lady, Honeycrisp, Jonagold, Fuji, or Ambrosia.
  2. Mixing Made Easy: No handheld mixer? No worries! You can use a stand mixer instead to whip up your batter.
  3. Slice with Precision: While you can use a mandolin to slice your apples, I find that using a knife gives better results. Aim for slices that are about 1 to 2 mm thick for the perfect texture in your cake.
  4. Metric Magic: I’ve used gram measurements in this recipe because they’re more precise for baking. But if you don’t have a scale that measures in grams and milliliters, don’t sweat it! I’ve included approximate imperial equivalents to help you out.
  5. Serve Any Way You Like: Whether you prefer it warm, at room temperature, or chilled from the fridge, this cake is delicious any way you slice it!
  6. Keep it Fresh: Store any leftovers in an airtight container in the refrigerator. It’ll stay fresh for up to 4 days, though it’s so tasty, it might not last that long!

Time for The Tips!

  1. Mixing Matters: If you have a stand mixer handy, feel free to use it instead of a handheld one. It can make the mixing process a whole lot easier and less tiring!
  2. Slicing Savvy: While a mandolin can be used to slice the apples, I’ve found that using a good old knife gives better results. Aim for slices that are about 1 to 2 mm thick for the perfect texture in your cake.
  3. Metric Magic: In this recipe, I’ve used gram measurements. Why? Because when it comes to baking, precision is key for the best results. If you don’t have a scale that measures in grams and milliliters, don’t fret! I’ve provided approximate imperial equivalents to help you out.
  4. Plan Ahead: Need to whip up this cake for a special occasion? No problem! You can prepare it a day in advance. Once it’s cooled down after baking, simply cover it up and pop it in the fridge until you’re ready to serve. Easy peasy, right?
